Liquid Lecithin Emulsifier

I just discovered this delicious new recipe for banana bread that is gluten free and dairy free, although it does contain eggs.  It is super easy to make and the combination of the banana with the cacao nibs is perfect!

1/2 cup coconut flour

1/4 cup cacao nibs

3/4 teasp baking soda

1 teasp cinnamon

4 eggs

1/3 cup raw honey

3 mashed bananas

1/3 cup coconut oil (melted to a liquid or softened)


20130721_171911Preheat the oven to 350 degrees. Combine all of the dry ingredients in a bowl and the wet ingredients in a separate bowl. Add the wet ingredients to the

20130721_172401dry ingredients. Pour the combined mixture into a bread loaf baking pan. Put in the oven for 40 minute or until brown on top. Remove from the oven and allow time to cool. Slice and enjoy!

Makes 10 thick slices.
